The purpose of storage is to create external conditions which are necessary to control ripening cycle of the cheese as far as possible. The cheeses are placed on wooden boards which are positioned into wooden cheese frames.
A complete air conditioning system is normally used to maintain the necessary humidity and temperature conditions.
